Quick and Easy Blender Salsa
Thanks to:
Ingredients:1- 14 oz can diced tomatoes
1- 10 oz can original Rotel
1/2 small onion, roughly chopped
1 clove garlic, peeled and smashed
1/2-1 jalapeno, seeded or not (depends on how spicy you like it)
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon ground cumin
small to medium size handful of cilantro, washed
juice of 1 lime
Directions:
Put all the ingredients in the base of a food processor or good blender and pulse to combine for 30 seconds or so until all the ingredients are finely chopped and salsa is desired consistency. Season to taste. Serve with chips or over tacos.

Mmmm...honey in salsa!? Sounds strange but divine! Looks so good! I have been craving chips and salsa for so long!! Thank you for testing it out and sharing it here!

ReplyDeleteJillee - try one teensy change and tell me what you think. Instead of using regular plain diced tomatoes, use the fire-roasted ones. And if you can find the organic ones from Muir Glen (WalMart here carries them, as does WF and Target)- so much the better. People who eat salsa all of the time rave about it - and basically my recipe is the same as yours, except for the honey. Something about those fire-roasted tomatoes is incredibly yummy - enough so that if I get a bumper crop of tom's next summer I am going to go to the trouble of roasting them before canning them.
ReplyDeleteDenise...that's so funny you should mention that...I actually looked at those when I was at the store and considered using them but then didn't. I'm definitely going to try it next time...which will be soon because I made a DOUBLE batch and it's almost gone! lol
