So that's why I'm posting it here, for those of you who haven't yet been let in on the "secret". I decided to make Honey Lime Chicken Enchiladas for Sunday dinner and since it calls for shredded chicken, I just decided to snap a few pics while I was at it. I'm pretty sure the pictures speak for themselves. Just make sure you do this when the chicken is still warm/hot!
Update: a few people have asked for a few more details....so here they are. I used the paddle hook on my KitchenAid...and I did it on a low setting for a couple of minutes. Start slow and speed up as it becomes more shredded.

ReplyDeleteQuestion....Unlike anonymous I do not have a stand mixer =+( My long wait continues. Do you think this would work with a hand mixer? Maybe a dough hook attachment or the regular beater attachments? Help! I want to shred chicken the easy way too! =+)

ReplyDeleteOK...Maybe it wasn't as self-explanatory as I thought! lol. I used the paddle attachment and I did it on pretty low speed for a minute or two.
ReplyDeleteAs far as cooking in the crockpot...I literally just throw some frozen chicken breasts in the crock (of course they don't HAVE to be frozen...that's usually what I have) and I usually season with my "house seasoning" (haha..I just like to say that) salt, pepper, garlic powder, onion powder and some dried parsley ( I have this thing for having at least some bit of green on my chicken...it's weird.) No need to add water...the breasts are plenty moist all by themselves. Let them sit all day at low...or 1/2 a day at high.

Diane...I'm not sure. I don't see why you couldn't do it with a hand mixer. Might just have to do it in small batches?
